Français 4: Fatima, please watch this very short video on how to make French cream puffs. They are called Choux à la crème in French. The batter is called Pâte à Choux. It is the same batter that you use to make filled éclairs. Cream puffs can be filled with any kind of creamy custard, some kinds of whipped cream, or even vanilla pudding. You can top them with sprinkled sugar, or chocolate glaze. This is also actually the batter that is used to make Funnel Cakes, only then, you drop the batter into hot oil to fry it, instead of baking it. Pâte à choux has lots of water incorporated into the batter, so, when it bakes, steam inside of each little puff will expand to make a hollow inside. That's where you end up putting your cream, custard, or pudding.
